Brioche French Toast Cups Two Ways
Whether you prefer savory or sweet, these brioche cups by The Thome Home are sure to be a hit at your next brunch!

Ham + Cheese Brioche Brunch Cups
- Preheat the oven to 375°F. Grease a muffin tin.
- In a large mixing bowl, add the eggs, buttermilk, melted butter, garlic powder, onion powder, smoked paprika, and a generous pinch of salt + pepper.
- Add in the cubed brioche bread, diced ham, spinach, and 3/4 of the shredded cheese, and use your hands to toss everything together and evenly combine the ingredients. The brioche will soak up the majority of the liquid.
- Overfill each muffin cup into a mound with the ham and cheese brioche mixture.
- Sprinkle the remaining shredded cheese on top of each brioche cup.
- Bake at 375°F for 25-30 minutes, until the cups are golden.
Wild Berry Brioche Brunch Cups
- Preheat the oven to 375°F. Spray a muffin tin with nonstick spray, or use butter to grease the pan.
- Slice each piece of brioche bread into bite-size squares, 4 vertical cuts and 3 horizontal cuts to create 12 squares.
- In a large mixing bowl, add the eggs, buttermilk, melted butter, brown sugar, cinnamon, salt, and vanilla and give it a good stir.
- Pour in the frozen blueberries, frozen raspberries, and cubed brioche.
- Use your hands to gently toss everything together and allow the brioche to soak up the majority of the egg/buttermilk mixture.
- Overfill each muffin cup into a mound with the wild berry brioche mixture.
- Add a few more frozen berries on top of each brioche cup.
- Bake at 375°F for 30-40 minutes, until the cups are golden.
Notes
Best served warm! Prepping for a party? The day before, make your choice of brioche cups and then let them cool completely in the muffin tin. Cover the muffin tin with foil and store in the fridge. When ready to serve, simply slide the foiled muffin tin into the oven and set to 350°F. Let it preheat (warming the cups up slowly) and give them an additional 10 minutes after the oven reaches 350°F, and they’ll be nice and warm!
The Wild Berry Brioche Brunch Cups are best served sprinkled with powdered sugar and warm maple syrup for dipping.
