Ingredients
- 10 egg yolks
- 1/4 cup peanut butter
- 3 cups heavy whipping cream
- 1 cup whole milk
- 1/3 cup granulated sugar
- 1 whole semi-sweet chocolate bar (chopped)
- 3 tbsp cane or turbinado sugar
- Whipped cream
- Mini buckeye candies
- Fresh mint leaves
Directions
- Preheat your oven to 325°F (160°C). Place 8 ramekins inside a deep metal roasting/baking pan.
- In a pot over medium heat, combine 3 cups heavy whipping cream and 1/3 cup granulated sugar. Heat for 5–10 minutes, whisking constantly so the mixture doesn't scorch or burn.
- Add 1/4 cup peanut butter, the chopped semi-sweet chocolate bar, and 1 cup whole milk to the warm cream. Whisk continuously until completely smooth and combined.
- Separate 10 egg yolks into a separate glass bowl and whisk them well.
- Slowly ladle small amounts of the warm chocolate-peanut butter cream into the egg yolks while whisking constantly. Drizzle extremely slowly so the eggs temper smoothly without scrambling. Once tempered, gradually pour in the remaining cream mixture while continuing to whisk.
- Ladle or pour the custard mixture evenly into the prepared ramekins.
- Place the pan on the lower 1/3 rack of your oven. Carefully pour boiling water into the metal pan around the ramekins until it reaches halfway up their sides.
- Bake at 325°F for 20–25 minutes, until the edges are set and the centers have a slight wobble. Remove from the water bath and let them cool/chill completely.
- Sprinkle a thin, even layer of cane or turbinado sugar over the top of each chilled custard. Lightly torch the sugar until golden and caramelized. (Tip: If you don't have a kitchen torch, place under the oven broil setting for a few seconds while watching closely.)
- Top each crème brûlée with a dollop of whipped cream, a mini buckeye candy, and a mint leaf. Let the sugar shell cool for a minute before cracking with a spoon.
