Chocolate Cherry Oatmeal Cookie Trifles

Ingredients

14 Tablespoons butter, room temperature
¾ cup dark brown sugar
½ cup granulated sugar
3 large eggs
1 teaspoon vanilla
1 ½ cups all purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 ½ cups old fashioned oats
1 cup chopped dried cherries
1 cup mini chocolate chips
6 tablespoons chopped pecans

Directions

Preheat oven to 350 degrees.

In a small bowl combine the flour, baking soda and salt.

With a mixer cream together the butter and the sugars until fluffy. Add the eggs one at a time until well combined. Add the vanilla.

Slowly add the flour mixture until no dry spots remain. Add the oats.

Gently stir in the dried cherries and mini chocolate chips.

On parchment-lined cookie sheets, drop rounded tablespoons of dough an inch or two apart.

Bake cookies until golden brown about 12-14 minutes. Cool cookies on a cooling rack until room temperature.

Trifles

  • Using an 8-10 ounce drinking glass, layer approximately 2-3 tablespoons of the pudding, place a cookie on top and repeat with more pudding, then a cookie and finally pudding on the top layer.
  • Garnish with the chopped pecans.
