Ingredients

Classic Egg Salad

12 hard-boiled eggs, chopped
1/4 cup mayo
1 tbsp dijon
2 tbsp shallot, minced
2 tbsp chives, chopped
1 cup celery, finely diced
Salt and pepper

Dill Pickle Egg Salad

12 hard-boiled eggs, chopped
1/4 cup mayo
1 tbsp dijon
2 tbsp shallot, minced
3/4 tbsp dried dill
1 cup celery, finely diced
1 cup dill pickles, finely chopped
2 tbsp pickle juice
Salt and pepper

Directions

Classic Egg Salad

  • In a mixing bowl, add the chopped eggs, mayo, Dijon mustard, shallot, chives and celery.
  • Generously season with salt and pepper.

  • Stir everything together until evenly combined, and add an additional tablespoon of mayo or two if needed to reach the desired consistency.

  • Store in an airtight container in the fridge and enjoy in sandwiches, wraps, on crackers and so much more!

Dill Pickle Egg Salad

  • In a mixing bowl, add the chopped eggs, mayo, Dijon, shallot, dill, celery, pickles and pickle juice.

  • Generously season with salt and pepper.

  • Stir everything together until evenly combined, and add an additional Tablespoon of mayo or two if needed to reach the desired consistency.

  • Store in an airtight container in the fridge and enjoy in sandwiches, wraps, on crackers and so much more!
