Ingredients

Cake

1 cup cake flour
1 ½ cups confectioners sugar
13 egg whites – room temperature
1 ½ tsp. cream of tartar
¼ tsp. salt
1 cup granulated sugar
1 ½ tsp. vanilla
½ tsp. almond extract

Glaze

2 tbsp. butter
2 tbsp. water
¼ tsp. almond extract
Add powdered sugar until creamy

Directions

  • Preheat oven to 350 °F.
  • Blend the cake flour and powdered sugar together – set aside.
  • Beat egg whites with the cream of tartar and salt until frothy – then slowly add granulated sugar. Beat until it forms peaks.
  • Fold in the flavorings. Fold in the flour and sugar mixture.
  • Put in cake pan and bake at 350 °F for 35 minutes.
  • When baking time is complete, turn cake over to cool.
  • Once cooled, lightly ice the cake with the glaze.
