Summer Spanish Omelet in a Cup

This simple omelet is perfect for those busy weekdays!

Ingredients

2 large Ohio eggs
½ teaspoon smoked paprika, plus more for sprinkling
2 tablespoons milk or water
3 tablespoons shredded Manchego cheese, divided
¼- ½ teaspoons finely diced chives
Salt and pepper to taste

Directions

  • In a small bowl, stir together the eggs, smoked paprika and milk. Season with salt and pepper. Whip mixture until the whites are well combined.
  • Spray a 10-12 ounce microwave safe coffee cup with nonstick cooking spray. Pour egg mixture into the cup and place the cup in the center of the microwave.
  • Microwave on high for 30 seconds. Remove cup from the microwave and stir the cooked parts into the uncooked eggs and add 2 tablespoons of cheese.
  • Place cup back in the microwave and microwave for 20 second intervals until cooked. Times will vary depending on your microwave.
  • Remove from the microwave and top with remaining cheese, chives and a sprinkling of the smoked paprika.
