Chocolate Espresso Cake in a Cup

This cake in a mug makes for a delicious, quick dessert!

Ingredients

3 ounces softened cream cheese

¼ cup sour cream

1 ½ tablespoons cocoa powder

½ teaspoon instant espresso powder

¼ cup powdered sugar, plus more for garnish

1 large Ohio egg

½ teaspoon vanilla

Pinch of salt

2 tablespoons of toasted sliced almonds

Directions

In a small bowl, combine the cream cheese, sour cream, cocoa powder, espresso powder and powdered sugar. Stir until smooth. Add the egg, vanilla and salt. Stir until everything is well combined.

Spray a 10-12 ounce microwave safe coffee cup with nonstick cooking spray.

Pour mixture into cup and place in the microwave. Microwave for 30 seconds, remove from microwave and stir. Place back into microwave and cook for approximately 2-3 minutes until done. Times may vary according to your microwave.

Remove from microwave and let sit for a minute to cool. Top with a dusting of powdered sugar and toasted almonds.
