2 tablespoons unsalted butter
8 slices of pre-sliced bakery bread (we recommend Italian bread)
4 tablespoons mayonnaise
1 cup pimento cheese spread (1/4 cup per sandwich)
4 large eggs
1 tablespoon finely chopped chives
Salt and pepper to taste
Place one tablespoon butter in medium/large skillet over medium heat.
Spread ½ tablespoon of mayonnaise per slice of bread.
Place one slice of bread mayonnaise side down in skillet, spread with ¼ cup of cheese. Top with second slice of bread, mayonnaise side up. Cook until lightly golden brown.
Flip sandwich and cook until browned to preference.
Remove from pan to a cutting board. Use a 2-inch round cookie cutter to stamp out the center of the sandwich.
Return the sandwich to pan, placing the least browned side down.
Crack one egg into the hole, cover pan and cook until egg is set.
Remove sandwich from pan and garnish with chopped chives and pepper.
