This recipe is an Ohio egg farming family-favorite! Janet Rindler's family has been involved in the egg farming community for more than four decades. The family owns and operates Prairie Star Farms, a third-generation farm with locations throughout northwest Ohio and Indiana. Ingredients

For the Cake

1 cup cake flour

1 ½ cups confectioners sugar

13 egg whites – room temperature

1 ½ tsp. cream of tartar

¼ tsp. salt

1 cup granulated sugar

1 ½ tsp. vanilla

½ tsp. almond extract

For the Glaze

2 tbsp. butter

2 tbsp. water

¼ tsp. almond extract

Add powdered sugar until creamy

Directions

Preheat oven to 350 °F.

Blend the cake flour and powdered sugar together – set aside.

Beat egg whites with the cream of tartar and salt until frothy – then slowly add granulated sugar. Beat until it forms peaks.

Fold in the flavorings. Fold in the flour and sugar mixture.

Put in cake pan and bake at 350 °F for 35 minutes.

When baking time is complete, turn cake over to cool.

Once cooled, lightly ice the cake with the glaze.
