Ingredients

4 cups diced, cooked chicken breast

1 stalk of celery, finely diced

¾ cup mayonnaise

1 ½ tsp. lemon pepper seasoning (Note: this contains some salt, pepper and dried onion, so taste it before adding extra salt or pepper)

1 tsp. fresh lemon juice

½ cup toasted slivered almonds

Directions

In a medium bowl, combine the chicken and celery. In another smaller bowl, stir together the mayonnaise, lemon pepper and lemon juice. Pour the mayonnaise mixture over the chicken and celery and stir to combine. Fold in the toasted almonds. Serve on a croissant or lettuce leaves.
