Summer Spanish Omelet in a Cup

Ingredients

2 large Ohio eggs

½ teaspoon smoked paprika, plus more for sprinkling

2 tablespoons milk or water

3 tablespoons shredded Manchego cheese, divided

¼- ½ teaspoons finely diced chives

Salt and pepper to taste

Directions

In a small bowl, stir together the eggs, smoked paprika and milk. Season with salt and pepper. Whip mixture until the whites are well combined.

Spray a 10-12 ounce microwave safe coffee cup with nonstick cooking spray. Pour egg mixture into the cup and place the cup in the center of the microwave.

Microwave on high for 30 seconds. Remove cup from the microwave and stir the cooked parts into the uncooked eggs and add 2 tablespoons of cheese.

Place cup back in the microwave and microwave for 20 second intervals until cooked. Times will vary depending on your microwave.

Remove from the microwave and top with remaining cheese, chives and a sprinkling of the smoked paprika.
