Very Berry Baked French Toast

Ingredients

12 slices day-old bread, cut into 1-inch cubes

2 packages (8 ounce) cream cheese, cut into ½-inch cubes

1 ½ cups fresh berries (any combination of blueberries, blackberries and/or raspberries)

12 eggs

2 cups milk

½ cup heavy cream

1 tsp vanilla extract

1/3 cup maple syrup

½ tsp cinnamon

Directions

Lightly grease a 9x13 baking dish with butter. Arrange half of the bread in the dish and top with cream cheese. Sprinkle berries over the cream cheese. Top with remaining bread.

In a large mixing bowl, whisk eggs until well beaten. Add milk, vanilla, syrup and cinnamon and mix. Pour egg mixture over the bread cubes. Cover and refrigerate for at least an hour (may refrigerate overnight).

Remove from the refrigerator 30 minutes prior to baking. Cover and bake in a preheated 350-degree oven for 30 minutes. Uncover and continue baking for 25 minutes or until the center is firm and set, and the top is lightly browned.

Serve with additional maple syrup or a berry compote.
