Ingredients

12 large eggs, hard cooked and cut in half lengthwise
6 tbsp. mayonnaise
2 tsp. mustard
1 tsp. cider vinegar
Salt and pepper, to taste

Directions

  • Separate the yolks from the whites and put yolks in a small bowl. Mash the yolks with a fork or pastry cutter until there are no lumps. Add the mayonnaise, mustard, vinegar, salt and pepper, and stir until combined. Arrange egg whites on a platter. Using a pastry bag or by dolloping, fill the whites with the yolk mixture. Serve immediately or wrap and store in the refrigerator until ready to serve.
  • Divide the yolk mixture into fourths to make all four variations.

Smoked Paprika Deviled Eggs

Fill the whites with the basic yolk mixture and sprinkle the tops with smoked paprika.

Bloody Mary Deviled Eggs

Add 1 teaspoon of sun-dried tomato paste (or regular tomato paste) and ¼ teaspoon prepared horseradish to the basic filling recipe. Garnish with finely diced celery (approximately one tablespoon divided over six eggs) and crispy bacon.

Everything Bagel Deviled Eggs

Add 1 teaspoon of everything bagel seasoning and 1 tablespoon of softened cream cheese to the basic filling recipe. Fill egg white halves with the yolk mixture and add a final sprinkle of the everything bagel seasoning.

Tex-Mex Deviled Eggs

Add 2 teaspoons salsa and 1-2 dashes hot sauce to the basic filling recipe. Fill the egg white halves with the mixture and top each one with a thinly sliced jalapeño.
