Berry Eggs Benedict

4 large poached eggs. You can find our favorite method here!
Directions
- In a small bowl stir together the mascarpone, whipped cream cheese, powdered sugar, vanilla and cinnamon until smooth and well combined.
- Spread the cheese mixture evenly between the four English muffins. Place the sliced strawberries on top of the cheese mixture in a single layer.
- While you are poaching the eggs stir together the strawberry jam, Grand Mariner and salt in a small saucepan. Stir over low heat until the jam has melted.
- Place the English muffins on a plate and place a poached egg on each. Pour I tablespoon of the sauce on each egg and garnish with mint leaves.
