Berry Eggs Benedict

Ingredients

4 large poached eggs. You can find our favorite method here!
2 whole English muffins, toasted (4 halves)
3 tbsp Mascarpone
3 tbsp Whipped cream cheese
1 ½ tbsp Powdered sugar
½ tsp Vanilla
¼ tsp Ground cinnamon
6-8 strawberries thinly sliced
Mint leaves for garnish

Sauce

¼ cup strawberry jam
1 tbsp Grand Mariner
Pinch of salt

Directions

  • In a small bowl stir together the mascarpone, whipped cream cheese, powdered sugar, vanilla and cinnamon until smooth and well combined.
  • Spread the cheese mixture evenly between the four English muffins. Place the sliced strawberries on top of the cheese mixture in a single layer.
  • While you are poaching the eggs stir together the strawberry jam, Grand Mariner and salt in a small saucepan. Stir over low heat until the jam has melted.
  • Place the English muffins on a plate and place a poached egg on each. Pour I tablespoon of the sauce on each egg and garnish with mint leaves.
