Buffalo Deviled Eggs with Bleu Cheese & Potato Chip Crumble

Ingredients

1 dozen hard boiled eggs
1/2 cup cottage cheese
2 Tbsp buffalo hot sauce
2 tsp dijon mustard
3/4 tsp garlic powder
3/4 tsp onion powder
Generous pinch of salt & pepper
1/2 cup chives, chopped
6 potato chips, broken into pieces
2 Tbsp bleu cheese crumbles

Directions

  • Peel the shell off of the hard boiled eggs
  • Slice the eggs in half, top to bottom and scoop out the yolk saving all 12 yolks
  • In a food processor, add the egg yolks, cottage cheese, hot sauce, Dijon mustard, garlic powder, onion powder, salt and pepper and blend until smooth and creamy
  • Pipe the creamy buffalo egg filling into each hard boiled egg vessel
  • Top with crumbled bleu cheese, crinkled potato chips and garnish with chopped chives and a drizzle of hot sauce
