Chocolate Babka Bread Pudding

Ingredients

2 loaves store bought or homemade chocolate babka
4 eggs 
2 cups whole milk 
1/2 cup cream
1/4 cup brown sugar (optional, add for a sweeter bread pudding or omit and top with maple syrup at the end)
1/4 tsp cinnamon 
1/4 tsp nutmeg 
1 tsp vanilla
Pinch of salt 
2 tbsp melted butter (for coating dish)

Directions

  • Cut or tear up babka into ~1 in. pieces.
  • Whisk together eggs, milk, cream, brown sugar (if using), cinnamon, salt, vanilla, and nutmeg.
  • Melt butter and pour into a 9x13 baking dish.
  • Put cut up babka into the baking dish and pour the egg mixture over the top.
  • Squish down the babka so that it is soaking up the egg mixture.
  • Put the dish into the refrigerator for at least 4 hours, preferably overnight.
  • Once you're ready to bake, preheat the oven to 350°F, cover the dish with foil, and bake for 25 minutes.
  • Uncover the dish and continue baking for 25-30 more minutes, until the internal temperature is at least 160°F.
  • Serve with maple syrup or as is and enjoy!
