Chocolate Espresso Cake in a Cup

This cake in a mug makes for a delicious, quick dessert!

Ingredients

3 ounces softened cream cheese
¼ cup sour cream
1 ½ tablespoons cocoa powder
½ teaspoon instant espresso powder
¼ cup powdered sugar, plus more for garnish
1 large Ohio egg
½ teaspoon vanilla
Pinch of salt
2 tablespoons of toasted sliced almonds

Directions

  • In a small bowl, combine the cream cheese, sour cream, cocoa powder, espresso powder and powdered sugar. Stir until smooth. Add the egg, vanilla and salt. Stir until everything is well combined.
  • Spray a 10-12 ounce microwave safe coffee cup with nonstick cooking spray.
  • Pour mixture into cup and place in the microwave. Microwave for 30 seconds, remove from microwave and stir. Place back into microwave and cook for approximately 2-3 minutes until done. Times may vary according to your microwave.
  • Remove from microwave and let sit for a minute to cool. Top with a dusting of powdered sugar and toasted almonds.
