Eggnog Pie

Ingredients

4 eggs
½ cup sugar
½ cup all-purpose flour
¾ teaspoon baking powder
1/8 teaspoon salt
2 cups eggnog
1 teaspoon vanilla
½ teaspoon nutmeg
Pinch of salt
4 tablespoons butter, melted

Whipped cream topping

2 cups heavy cream
½ cup sugar
1 ½ teaspoon rum (optional) or vanilla extract
Optional garnish: chocolate curls

Directions

  • Combine eggs, sugar, flour, egg nogg, vanilla, nutmeg, and salt in a blender. Pulse until well combined and smooth. Slowly drizzle in melted butter on low speed.
  • Pour mixture into 9-inch chocolate crumb crust.
  • Bake at 350 degrees for 40 - 45 minutes, or until a knife inserted into the center of the pie is clean.
  • Remove from oven and allow to set for 45 minutes. Refrigerate after cooling if not serving immediately.
  • Whipped cream: with a stand or hand mixer whip heavy cream, sugar and rum or vanilla on low for one minute, then increase speed and whip until still peaks. Dollop on top of pie and garnish with chocolate curls. Serves 8.
