
Farmer's Market Frittata
Light, fluffy eggs meet fresh veggies and sharp cheddar in this frittata that’s versatile and delicious. Whether you’re feeding a crowd or meal-prepping for the week ahead, this dish always impresses!
Directions
- Preheat oven to 375°F.
- In a medium bowl, whisk eggs until well combined. Whisk in the heavy cream, salt and pepper. Gently stir in the cheddar cheese.
- In a 12-inch ovenproof nonstick skillet, melt the butter over medium heat. Add the zucchini, corn and green onions, sautéing until tender. Add the tomatoes and dill, cooking for about one minute.
- Pour the egg mixture into the skillet, stirring to evenly distribute all the ingredients.
- Place the skillet into the oven. Bake approximately 16-18 minutes.
- Remove from the oven. Let stand 5 minutes before serving.
