Farmer's Market Frittata

Ingredients

12 large Ohio eggs
1/2 cup heavy cream
3 tablespoons butter
3/4 cup finely diced zucchini
1 cup cherry tomatoes, halved
3/4 cup fresh corn
1/4 cup finely sliced green onions
1 tablespoon chopped fresh dill
1 1/2 cups sharp cheddar cheese
Salt and pepper

Directions

  • Preheat oven to 375°F.
  • In a medium bowl, whisk eggs until well combined. Whisk in the heavy cream, salt and pepper. Gently stir in the cheddar cheese.
  • In a 12-inch ovenproof nonstick skillet, melt the butter over medium heat. Add the zucchini, corn and green onions, sautéing until tender. Add the tomatoes and dill, cooking for about one minute.
  • Pour the egg mixture into the skillet, stirring to evenly distribute all the ingredients.
  • Place the skillet into the oven. Bake approximately 16-18 minutes.
  • Remove from the oven. Let stand 5 minutes before serving.
