Green Scrambled Eggs

These green dyed scrambled eggs make for the perfect St. Patrick's Day breakfast!

Ingredients

3 large Ohio eggs
1 tablespoon heavy cream
3-4 drops green food coloring
½ tablespoon unsalted butter
Salt and pepper to taste

Directions

  • In a bowl whip together the eggs and heavy cream until well combined. Stir in the food coloring and season with salt and pepper.
  • Melt the butter in a small skillet over medium high heat until melted. Pour in egg mixture and slowly stir the eggs with a silicone spatula. Cook the eggs until the spatula leaves a trail at the bottom of the pan. Reduce heat and fold the eggs until slightly wet.
  • Transfer eggs to a plate and season with salt and pepper.

Notes

For a kid friendly version of the green eggs, stir in about a ¼ cup cheddar cheese or cheese of your choice. For an adult serving suggestion, serve the eggs over a bed of spinach and top with a dollop of pesto.
