Grilled Peach Sabayon

This grilled peach dessert is one you won’t want to miss! Fresh, juicy peaches paired with creamy sabayon is summer indulgence at its finest.

Ingredients

8 large Ohio egg yolks
2/3 cup sugar
2/3 cup Marsala (or white wine, such as Sauvignon Blanc)
2 fresh peaches, halved (if not in season, use frozen sliced peaches as shown)
2 tablespoons butter, melted
1/4 cup crushed ginger snap cookies

Directions

  • Heat grill to medium.
  • Brush the cut side of peaches with melted butter and place them on the grill. Let peaches sit until char marks form, then remove. In a medium bowl, whisk the egg yolk until foamy. Gradually add sugar and then wine.
  • Place the bowl over a pan of simmering water, whisking continuously until the mixture is thickened and reaches 160° F.
  • Place one grilled peach half in a dessert dish and add the sabayon on the side. Include any other fresh fruit you have on hand. Repeat with the other three peach halves.
  • Top with a sprinkle of ginger snap cookies and serve.
