Grilled Pimento Cheese Egg in a Hole

Ingredients

2 tablespoons unsalted butter
8 slices of pre-sliced bakery bread (we recommend Italian bread)
4 tablespoons mayonnaise
1 cup pimento cheese spread (1/4 cup per sandwich)
4 large eggs
1 tablespoon finely chopped chives
Salt and pepper to taste

Directions

  • Place one tablespoon butter in medium/large skillet over medium heat.
  • Spread ½ tablespoon of mayonnaise per slice of bread.
  • Place one slice of bread mayonnaise side down in skillet, spread with ¼ cup of cheese. Top with second slice of bread, mayonnaise side up. Cook until lightly golden brown.
  • Flip sandwich and cook until browned to preference.
  • Remove from pan to a cutting board. Use a 2-inch round cookie cutter to stamp out the center of the sandwich.
  • Return the sandwich to pan, placing the least browned side down.
  • Crack one egg into the hole, cover pan and cook until egg is set.
  • Remove sandwich from pan and garnish with chopped chives and pepper.
