Grilled Sausage Coil with Potatoes and Eggs

Ingredients

1 32-ounce bag of frozen O'Brien Potatoes
2 lb sausage coil (We used North Country Charcuterie's South African-Style "Boerewors" Farmers Sausage)
8 large eggs, scrambled (see link below)
Chopped parsley for garnish

Directions

  • Cook potatoes according to the package instructions.
  • Cook sausage coil on the grill until cooked through and browned.
  • Make creamy scrambled eggs.
  • Transfer the potatoes to a large platter and then place the grilled sausage on the potatoes. Top with the scrambled eggs. Garnish with the parsley and serve.
