Key Lime Cheesecake

Ingredients

1 ½ cups graham cracker crumbs
½ cup finely chopped pecans
¼ cup real butter, melted
1 ¼ cups sugar
3 (8-ounce) packages cream cheese, softened
1 cup sour cream
3 tablespoons flour
5 eggs
½ cup key lime juice
1 teaspoon vanilla extract
2 Key limes, cut into quarters
Mint leaves

Directions

  • Preheat oven to 375°.
  • Combine crumbs, nuts, melted butter and ¾ cup sugar; press firmly on bottom and sides of 9-inch springform pan.
  • Bake 8 minutes. Cool.
  • In large bowl, beat cream cheese and remaining 1 cup sugar until smooth.
  • Add sour cream, flour and eggs one at a time, beating well after each addition.
  • Stir in lime juice and vanilla; mix well.
  • Pour over crust. Reduce oven temperature to 325°.
  • Bake 50 to 55 minutes or until center is set. Cool.
  • Chill 4 hours.
  • Garnish with limes and mint leaves.
