Ohio State Fair Chicken and Noodles

Use up leftover chicken to make Ohio State Fair Chicken and Noodles! This comfort food favorite tastes amazing with Kluski-style noodles and when served over mashed potatoes.

Ingredients

2 1/2 cups shredded, cooked chicken
3 cups chicken broth (two 14oz cans)
1 1/2 cups chicken gravy (one 12oz jar)
1/4 tsp black pepper
1/2 tsp salt
8 oz. Kluski-style egg noodles
1 tbsp parsley

Directions

  • Roughly chop or shred cooked chicken.
  • Heat broth, gravy, chicken, salt and pepper in saucepan over medium heat, until simmering. Stir occasionally.
  • Add noodles. Return to a simmer.
  • Cook uncovered on medium low heat for the time indicated on your noodle packaging. The mixture should be just bubbling. Stir occasionally.
  • Noodles are done when the liquid has reduced to a thick gravy and the noodles are soft. Add parsley and serve (we serve ours over mashed potatoes).

Notes

We use a thicker Kluski noodle when serving at the Ohio State Fair. Our noodles need 25 minutes to soften. You can use any egg noodle you prefer, just adjust the cook time to the package instructions. This is a great use for any leftover chicken - grilled, poached, oven roasted or even canned, this recipe tastes great with all of them! We particularly like the ease, speed and flavor that using grocery store rotisserie chicken brings to this recipe.
