Quick and Easy Coconut Custard Pie

Thick, creamy Coconut Custard Pie delivers the taste of the tropics in every bite. Combine all the ingredients in a blender and just pop in the oven for a no-fuss sweet treat.

Ingredients

4 eggs
1 ¾ cups sugar
½ cup self-rising flour
2 cups milk
1 teaspoon vanilla
½ teaspoon nutmeg
Pinch of salt
4 Tablespoon butter, melted
7 oz. flaked coconut

Directions

  • Combine eggs, sugar, flour, milk, vanilla, nutmeg and salt in a blender. Pulse until well combined and smooth. Slowly drizzle in melted butter on low speed. Add coconut and stir briefly.
  • Pour batter into deep dish 9-inch pie plate.
  • Bake at 350 degrees for 40 - 45 minutes or until a knife inserted into the center of the custard is clean.
  • Remove from oven and allow to set for 45 minutes.
