- In a skillet cook the sausage patties until browned and cooked through.
- Prepare the Hollandaise sauce and keep warm.
- Poach the eggs.
- Place the English muffin halves on a plate and place a sausage patty on each half and top a poached egg. Drizzle each with the hollandaise sauce. Garnish with a sprinkling of chopped parsley and salt and pepper.
