Summer Spanish Omelet in a Cup
This simple omelet is perfect for those busy weekdays!
Directions
- In a small bowl, stir together the eggs, smoked paprika and milk. Season with salt and pepper. Whip mixture until the whites are well combined.
- Spray a 10-12 ounce microwave safe coffee cup with nonstick cooking spray. Pour egg mixture into the cup and place the cup in the center of the microwave.
- Microwave on high for 30 seconds. Remove cup from the microwave and stir the cooked parts into the uncooked eggs and add 2 tablespoons of cheese.
- Place cup back in the microwave and microwave for 20 second intervals until cooked. Times will vary depending on your microwave.
- Remove from the microwave and top with remaining cheese, chives and a sprinkling of the smoked paprika.
