Swiss Cheese Fried Egg Sandwich

This quick and easy sandwich is perfect for breakfast, brunch or lunch!

Ingredients

4 large Ohio eggs
2 cups shredded Ohio Swiss cheese, divided
8 slices of multi-grain bread
Lettuce leaves
Sliced tomatoes
Whole grain mustard, or condiments of your choice
Salt and pepper to taste

Directions

  • In a nonstick skillet over medium heat add ½ cup of the cheese using a spoon to even out the cheese and making a small nest to hold the egg.
  • Crack the egg into the center of the cheese and cover the skillet with a lid. Cook until the egg is set, approximately 2 minutes.
  • While the egg cooks arrange the bread on a plate with the lettuce and tomato on one side and the mustard on the other.
  • When the egg is cooked place it on the mustard side of the bread and season with salt and pepper. Place the tomato and lettuce layer on top. Cut and serve.
