Key Lime Cheesecake

The Key Lime Cheesecake is an award-winning Ohio State Fair recipe.



1 ½ cups graham cracker crumbs

½ cup finely chopped pecans

¼ cup real butter, melted

1 ¼ cups sugar

3 (8-ounce) packages cream cheese, softened

1 cup sour cream

3 tablespoons flour

5 eggs

½ cup key lime juice

1 teaspoon vanilla extract

2 Key limes, cut into quarters

Mint leaves


Preheat oven to 375°.

Combine crumbs, nuts, melted butter and ¾ cup sugar; press firmly on bottom and sides of 9-inch springform pan.

Bake 8 minutes. Cool.

In large bowl, beat cream cheese and remaining 1 cup sugar until smooth.

Add sour cream, flour and eggs one at a time, beating well after each addition.

Stir in lime juice and vanilla; mix well.

Pour over crust. Reduce oven temperature to 325°.

Bake 50 to 55 minutes or until center is set. Cool.

Chill 4 hours.

Garnish with limes and mint leaves.
