Thick, creamy Coconut Custard Pie delivers the taste of the tropics in every bite. Combine all the ingredients in a blender and just pop in the oven for a no-fuss sweet treat.
Combine eggs, sugar, flour, milk, vanilla, nutmeg and salt in a blender. Pulse until well combined and smooth. Slowly drizzle in melted butter on low speed. Add coconut and stir briefly.
Pour batter into deep dish 9-inch pie plate.
Bake at 350 degrees for 40 - 45 minutes or until a knife inserted into the center of the custard is clean.
Remove from oven and allow to set for 45 minutes
