    Ingredients

    1 pound cake, cut into 1/2-inch cubes
    6 oz. red raspberries
    6 oz. blueberries
    1/2 cup raspberry jelly
    1/2 cup blueberry jelly or jam
    4 Mason jars (16oz. Used in this recipe)
    Whipped cream
    Mint for garnish

    Directions

    • Prepare a pound cake using this recipe. Cut into ½ inch cubes.
    • Spoon the jellies into two separate bowls. Heat each bowl in the microwave for 15-20 seconds to loosen the consistency. Lightly mix in the raspberries with the raspberry jam, being careful not to crush the fruit. Repeat the same process with the blueberries.
    • Layer the pound cake cubes at the bottom of the jar. Add a layer of the raspberry mixture, another layer of the pound cake, and then a layer of the blueberry mixture. Cover with lids and refrigerate until ready to serve.
    • If taking to a picnic, place the jars in a cooler with a container of whipped cream and mint.
    • Garnish with whipped cream and mint when ready to serve.
