Baked Cheesy Eggs with Sausage

This recipe by A Cedar Spoon is perfect to make-ahead for breakfast, brunch or lunch. You can serve these cheesy baked egg squares throughout the week before school or work, or freeze them for later!

Ingredients

Non-stick spray

12 eggs

1 tsp. Italian seasoning

1 tsp. garlic powder

8 oz. sharp cheddar cheese

8 oz. mozzarella cheese

16 oz. container of cottage cheese

12 pre-cooked turkey sausage links, chopped

2 tsp. chives, chopped

2 green onions, green and white parts chopped

1/2 tsp. salt

1/8 tsp.. black pepper

Chives for garnish

Fresh parsley for garnish

Cherry tomatoes, chopped for garnish

Directions

Preheat the oven to 350 degrees F.

In a large mixing bowl crack the eggs and whisk until combined.

Add the Italian seasoning, garlic powder, cheddar cheese, mozzarella cheese, cottage cheese, turkey sausage, chives, green onions, salt and pepper and mix well.

Spray non-stick spray in a 9 by 13 sized baking dish or casserole dish. Pour the egg mixture into the casserole dish.

Bake in the oven for 50 minutes or until the eggs are set. I start checking the eggs to see if they are set around th 45 minute mark.

Remove from the oven and let sit for 5 minutes. Cut the cheesy eggs into squares. Garnish with fresh chives, parsley and cherry tomatoes.

You can store the cheesy eggs in the fridge for up to 5 days.

You can freeze the eggs in an airtight container for up to 3 months.

Feel free to change up the spices- try paprika, chili powder, oregano, cumin, Greek seasoning or smoked paprika.

You can add vegetables like onions, bell peppers, poblanos, tomatoes or broccoli to the egg mixture. You can sauté the veggies before adding to the eggs to help them soften.
